- Para hacer el relleno de las berenjenas primero cortamos las berenjenas por la mitad a lo largo y hacemos unos cortes por dentro de la berenjena dónde añadimos un poco de aceite de oliva y un poco de sal, en un plato para microondas las tapamos con film transparente totalmente selladas y ponemos en el microondas durante 5 minutos después con una cuchara podemos sacar todo el interior de la berenjena porque estará muy tierno
- En una sartén con un chorro de aceite de oliva virgen extra hacemos un sofrito con cebolla, ajo zanahorias, pimientos rojos, pimientos verdes y patatas, todo troceado muy pequeño, cuando el sofrito esté hecho añadimos el interior de las berenjenas y cocinamos durante 2 o 3 minutos.
- Para montar el plato rellenamos las berenjenas con el sofrito y ponemos por encima la bechamel y queso rayado.
