- Preparar la pasta. En mi caso, como no necesitaba hervir, las puse en agua fría una hora. Después dejé escurrir en unos trapos, y reserva.
- Prepara un relleno primero en el que haremos una especie de pisto con el tomate triturado, una cebolla, la zanahoria, y el calabacín. Sazonamos al gusto. Y reservamos.
- Preparamos el otro relleno pochando la otra cebolla, añadiendo los champiñones con un poquito de perejil y las gambas (yo las puse a hervir un poco previas).
Después corté la berenjena en lonchas finas y las asé en una sartén con muy poquito aceite. - Preparamos la bechamel y reservamos.
- Ahora montamos todo:
Primero ponemos un poco de bechamel en la fuente que vayamos a utilizar. Conviene que tenga fondo porque haremos un par de capas. - Sobre la bechamel ponemos repartimos las placas de pasta. En mi fuente cabían unas cuatro. Después añadimos una buena capa del relleno de pisto. Sobre esta ponemos de nuevo las placas de pasta de lasaña. Ahora repartimos el otro relleno de champiñones con gambas y encima repartimos las lonchas de berenjena asada. En mi caso, repartí también un poco del pisto que me sobró y encima otra capa de pasta de lasaña.
- Ahora podemos ya verter la bechamel por encima, añadir queso rallado al gusto y yo le pongo un poquito de orégano por encima. Y lista para meter al horno, previamente precalentado el tiempo necesario para que el queso se haga. Sacamos del horno y servimos.
