  3. La berenjena la ponemos en un bol con agua, sal y limón para que no se oxide.
  4. En una placa de horno redonda de vidrio cubrimos la base con salsa de tomate y añadimos por encima el sofrito de ajo y cebolla.
  5. Con la ayuda de un vaso, vamos colocando las verduras intercalando el calabacín, el tomate y la berenjena. Vamos llenando la placa hasta hacer un círculo (el centro también lo podemos llenar).
  6. Añadimos sal, pimienta, romero, orégano y un buen chorro de aceite de oliva.
  7. Lo tapamos con papel de aluminio y lo ponemos al horno caliente durante 50 minutos a 180º.
  8. Lo destapamos después de los 50 minutos y lo dejamos al horno 25 minutos más.
  9. Podemos poner un poco de queso parmesano y gratinarlo y poner también un poco de olivada.
